Hey Fam! So today’s #lockdownfooddiary update is a salad dressing that is full of passion. Passionfruit to be exact and it is easy to make and one that your family can enjoy.
So many of us have started backyard farming during lockdown so this home made dressing can go well with fresh garden salad! It is so good!
The best thing though is that this dressing can keep in the fridge for more than a week if you store it well.
We had some passionfruit in our fridge so we used some for fresh juice that was also full of passion. We will post that recipe another time but see what we did with the rest.

What you’ll need:
- 1 cup passion fruit pulp
- 1/4 cup sugar
- 1/4 cup white vinegar
- 1/2 cup oil
- Salt and pepper, to taste
What you need to do:

- Combine all the ingredients in the blender or food processor.
- Blend until smooth and emulsified. Taste for seasoning and adjust salt and pepper
- Use right away or refrigerate in a lidded jar for up to two weeks.
