Today is all about #lockdownfooddiaryfiji and so this recipe for Cassava and Roti helps you save money for the win!
So, we have made Kumala tortillas for tacos before and it’s made exactly the same way.
You can use whatever kakana Dina that you have leftover and end up saving money while making yummy meals, for the win.
What you will need:
Cooked cassava (we used leftover pieces from Sunday lunch)
Food processor
Herbs & Spices (optional & you can use anything from fresh or dries herbs and spices)
1 cup flour (can use AP flour or plant based flour)
What you will do:
Steamed leftover cassava for 5mins to heat it up so it’s easier to process in the food processor
Cut up into small pieces and whizzed for 5 minutes until it gathered into a ball
We added jeera seeds (cumin) & 3/4 cup of flour to knead and get a much dryer dough and consistency
Roll out dough and cook on a hot plate. If you don’t have a roti ‘tawa’ you can use a frying pan.
Do not Grease or oil it, just put it on medium low heat.
Cook just as you would normal roti. We didn’t use any ghee or oil and it turned out perfect!
Things to note:
If you don’t have a food processor you can try using a blender or grating the cassava right after steaming and mash it!
PS. You will be pleasantly surprised with how easy and soft these roti’s will turn out!
