Fam, we hope you’re all keeping safe! But we love to share and so while we’re stuck at home we hope to be able to #sharebulathroughfood with you all in a totally different way! Our lockdown food diary has kept us excited and motivated when we have no choice but to stay indoors.
We love to share with you ‘easy to make’ recipes of things we’re doing in our kitchen that you and your family can make an activity out of and make a meal or snack together while we’re all stuck indoors.
So this diary is about our Afghan Cookies but of course it has a Kanalevu twist and because we love to share our cooking secrets with you, heres one that is easy because we made it with ever we could find in our fridge and pantry.
Win win because we made about 15 reasonable sized cookies with this mix you can even make them smaller in size and get a few more cookies out of it! Please tell us how you went with this recipe and send us pictures too!
What you will need:
200g of softened butter (we replaced this with margarine)
1/2 cup of sugar (can use either white or brown, we used brown)
1 tsp of vanilla essence
1 1/4 cups of plain flour
1/4 cup of cocoa
1 1/2 cups of cornflakes (we used about 4 crushed weetbix)
Icing:
1 cup of icing sugar
2 heaped tbsp of cocoa
1 cap of vanilla essence
25 grams of butter
What you will do:
Beat the butter, vanilla essence & sugar together until you get a nice creamy consistency and some of that sugar “dissolves”.
Add all the dry ingredients in and mix it all up nicely until you get a chocolate colored looking mix.
Use your hands and scoop a heaped tablespoon of the mixture into your hand and roll them into balls, then place them on your greased tray or grease/wax paper on your tray and use your fingers to flatten them.
Pre heat the oven to 180 degrees, pop them in the oven for about 15-18minutes.
While your cookies are in the oven mix your icing mixture.
After they have completely cooled, ice them and enjoy with a cold glass of milk!
ps/. We didn’t get to ice ours because they didn’t get to cool and of course we love to share so it didnt even last!
