Yadra Fam! This is an oldie, but a goodie and so Easy to make. Here’s one from our #lockdownfooddiaryfiji designed to make your day on those mornings when you need to start the day right.

Here’s our home recipe for easy to make Crepes in Kanalevu style that we thought to re-share with ya’ll! Its so easy to make so please give it a go and let us know how yours turned out.

Makes about 10 servings

What you will need:

1 3/4 cups flour
2 cups milk
1 tablespoon vanilla essence
2 tablespoons oil or melted butter

What you’ll do:

Mix all the ingredients together and give it a good whisk while gradually adding the milk into the mix to ensure that there’s no lumps. Your mix should be a nice creamy and runny consistency. Kind of like a watered down version of pikelet batter.

When it’s all mixed through place your mix using a serving spoon or jug into the pan and move it around so that you have a thin layer of the batter spread out on your pan. Because it’s a thin layer and it doesn’t take that long either to cook.

You can put all sorts of fillings in yours. Today we found a half jar of passionfruit curd in our fridge, so that’s what we are using to add the ‘zing’ to these crepes. You could use lemons to make your fillings and we know people who use strawberries too. Tell us about yours if its not the same as ours.
