Sorry Fam! The weather was not amazing when we did this entry for our #lockdownfooddiaryfiji but yummy food can inspire the change on a dreary day, right? So while its taken us a bit to post this, it is simply life changing!
So try this bagel recipe that we used to make today’s brunch that is its super easy so please after you try it, send us pics of how yours turned out and that can inspire more pastry baking out of our kitchen.
What you will need:
3 cups all purpose flour
2 tablespoons sugar
3/4 tablespoons instant yeast
1 1/4 cup warm water
1/2 tablespoon salt
1 egg (for egg wash only not to be used in the dough)
What you will do:
Mix all the ingredients into your mixer and attach the dough hook (not the ones you use for mixing cake mixes it’s the spiral looking one)
Once the dough starts coming together, flip it onto a floured surface and knead it until you get a smooth dough. You can keep adding sprinkles of flour while kneading if your dough is still a little sticky.
Place in a lightly oiled bowl and cover to sit and rise for about 1hour.
Once risen, place the ball of dough back on a lightly floured surface and cut into 8 equal parts.
Fold the tips of each part under so that you get a smooth ball and place it back on a lightly floured tray and let it rise for another 15mins.
Use thumb to create a hole in the middle of the dough balls.
Simmer a pot of water and boil the dough for 30-40seconds on each side then remove from pot and place on grease proof or wax paper for baking
Coat bagel dough with eggwash generously and sprinkle with whatever you want to put as topping or just have it plain.
Pre-Heat ovenat 220 degrees and bake for about 20mins or when you notice it’s browned evenly.
